Ingredients

For the Oatmeal Cookies:

1 cup rolled oats

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, softened

½ cup brown sugar, packed

½ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

For the Cream Filling:

½ cup unsalted butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (optional for desired consistency)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Mix Dry Ingredients: In a medium bowl, combine the rolled oats, flour, baking soda, cinnamon, and salt. Mix well and set aside.

Cream the Butters and Sugars: In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture, mixing until well combined.

Combine Dry and Wet Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Do not overmix.

Scoop Cookies: Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly undercooked, but they will firm up as they cool.

Let Cool: Remove from oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Make the Cream Filling: In a medium bowl, beat the softened butter with powdered sugar until combined. Add vanilla extract and mix until creamy. If needed for consistency, mix in a tablespoon of milk.

Assemble the Pies: Once the cookies are completely cooled, turn half of them upside down. Spread a generous tablespoon of cream filling on the flat side of each cookie, then sandwich with another cookie, flat side down.

Serve and Enjoy: Allow the assembled oatmeal cream pies to set for about 30 minutes for the filling to firm up slightly. Serve and enjoy your homemade treat!
