1 ½ cups rolled oats

2 cups milk (or a nondairy alternative)

1 cup brown sugar, packed

½ cup granulated sugar

1/3 cup unsalted butter, melted

3 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon nutmeg

¼ teaspoon salt

1 cup chopped nuts (walnuts or pecans), optional

1 pie crust (store-bought or homemade)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Pie Crust: If using a store-bought pie crust, place it in a 9-inch pie dish and set aside. If making your own, roll out your favorite recipe and fit it into the pie dish.

      Cook the Oats: In a medium saucepan, bring the milk to a simmer over medium heat. Stir in the rolled oats and cook for about 5-7 minutes until the oats become tender. Remove from heat and let cool slightly.

        Mix the Filling: In a large mixing bowl, whisk together the brown sugar, granulated sugar, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.

          Combine: Add the slightly cooled oat mixture to the sugar and egg mixture. Stir well until everything is thoroughly combined. If you're adding nuts, fold them in gently.

            Fill the Crust: Pour the oatmeal filling into the prepared pie crust evenly, making sure to spread it out smoothly.

              Bake: Bake in the preheated oven for 40-45 minutes or until the filling is set and the top is slightly golden. A toothpick inserted in the center should come out clean or with only a few moist crumbs.

                Cool: Once baked, remove from the oven and let the pie cool on a wire rack for at least 30 minutes before slicing.
