Ingredients
  

1 lb ground beef

1 medium onion, chopped

2 garlic cloves, minced

2 carrots, diced

2 celery stalks, diced

1 bell pepper, chopped (any color)

6 cups beef broth

1 can (14.5 oz) diced tomatoes, with juices

1 cup elbow macaroni

1 tsp dried thyme

1 tsp dried oregano

1 bay leaf

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, bell pepper, and minced garlic. Cook until the vegetables are tender, about 5-7 minutes.

    Increase the heat to medium-high, and add the ground beef. Cook, breaking it up with a spatula, until browned and cooked through, about 5-6 minutes. Drain excess fat if necessary.

      Stir in the diced tomatoes (with their juices), beef broth, dried thyme, dried oregano, bay leaf, salt, and pepper. Bring the mixture to a boil.

        Once boiling, reduce heat to a simmer and add the elbow macaroni. Cover and cook for about 10-12 minutes, or until the macaroni is al dente.

          Taste and adjust seasoning if needed. Remove the bay leaf before serving.

            Ladle the soup into bowls and garnish with fresh chopped parsley.
