2 cups cooked chicken, shredded

1 cup frozen peas and carrots

1 cup diced potatoes, boiled

1/3 cup butter

1/3 cup all-purpose flour

1 ¾ cups chicken broth

2/3 cup milk

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

1 teaspoon dried thyme

1 pre-made pie crust (or homemade, if preferred)

1 egg (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Cook the Filling: In a medium saucepan over medium heat, melt the butter. Once melted, stir in the flour and cook for 2 minutes until bubbly. Gradually whisk in the chicken broth and milk, stirring constantly until the mixture thickens (about 3-5 minutes).

      Add Seasoning: Gently stir in the chicken, peas and carrots, diced potatoes, onion powder, garlic powder, thyme, salt, and pepper. Simmer for another 4-5 minutes until heated through. Remove from heat and set aside.

        Prepare the Pie Crust: Place the bottom pie crust in a 9-inch pie dish. Pour the chicken mixture into the crust.

          Cover with Top Crust: Lay the top pie crust over the filling. Trim any excess crust hanging over the edges and crimp the edges with your fingers or a fork to seal. Cut small slits in the top for steam to escape.

            Apply Egg Wash: In a small bowl, beat the egg. Brush the egg wash over the top crust for a golden finish.

              Bake: Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

                Cool and Serve: Allow the pot pie to cool for about 10 minutes before slicing. Enjoy your family’s old-fashioned favorite!
