Ingredients

1 tablespoon olive oil

1 small onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

4 cups chicken broth

2 cups cooked chicken, shredded

1 package (16 oz) gnocchi

1 cup heavy cream

1 cup fresh spinach, chopped

1/4 cup grated Parmesan cheese

Fresh parsley, for garnish

Instructions

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are tender.

Add Garlic and Herbs: Stir in minced garlic, thyme, rosemary, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.

Add Broth: Pour in the chicken broth. Bring the mixture to a gentle boil.

Add Chicken and Gnocchi: Stir in the shredded chicken and bring back to a simmer. Add gnocchi and cook according to package instructions (usually about 2-3 minutes) until they float to the top.

Make it Creamy: Reduce the heat to low and stir in the heavy cream, followed by the chopped spinach. Simmer for another 2-3 minutes until the spinach wilts and the soup is heated through.

Finish with Cheese: Remove the pot from heat and stir in the grated Parmesan cheese until melted and incorporated.

Serve: Ladle the soup into bowls, garnish with fresh parsley, and enjoy!
