4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup bell peppers (red, yellow, and green), sliced

1 cup zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup grated Parmesan cheese

Juice of 1 lemon

Fresh basil leaves for garnish

Prep the Chicken: Preheat your oven to 425°F (220°C). Pat the chicken thighs dry with paper towels. Sprinkle garlic powder, Italian seasoning, salt, and pepper all over the chicken.

    Sear the Chicken: In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the seasoned chicken thighs. Sear them for about 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside on a plate.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Toss in the sliced bell peppers, zucchini, and cherry tomatoes. Sauté for about 5 minutes until they start to soften.

        Combine: Add the baby spinach to the skillet and stir until wilted. Return the seared chicken thighs to the pan and sprinkle the grated Parmesan cheese over the top. Squeeze the lemon juice over everything for extra brightness.

          Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
