Ingredients

1 lb (450g) Italian sausage (mild or spicy, as per preference)

2 tbsp olive oil

1 yellow bell pepper, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 tsp dried Italian herbs (oregano, basil, thyme)

1/4 tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

1 can (14 oz) diced tomatoes (with juice)

1/4 cup fresh parsley, chopped (for garnish)

Crusty bread or hoagie rolls (for serving)

Instructions

Prepare the Sausage: In a large skillet or pan over medium heat, add the Italian sausage links. Cook for about 7-8 minutes, turning occasionally, until browned and cooked through. Remove from the pan and set aside. Slice the sausages into 1-inch pieces once they are cool enough to handle.

Sauté the Vegetables: In the same pan, add olive oil and heat over medium-high. Add the sliced onion and bell peppers. Sauté for 5-7 minutes until they are tender and slightly caramelized. Add the minced garlic, dried herbs, red pepper flakes, salt, and pepper, and cook for another 1-2 minutes until fragrant.

Combine and Simmer: Return the sausage pieces to the pan. Pour in the diced tomatoes (with their juice) and stir everything together. Bring the mixture to a simmer, then reduce the heat to low and let it cook for an additional 5-10 minutes, allowing the flavors to meld.

Serve: Garnish with chopped fresh parsley. Serve hot over crusty bread or in hoagie rolls for a satisfying meal. Enjoy every bite of this colorful and hearty dish!
