1 pound medium shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest of 1 lemon

1/4 cup fresh lemon juice

Salt and pepper to taste

1/4 cup fresh parsley, chopped

1 cup cherry tomatoes, halved

8 ounces of linguine or spaghetti

2 cups vegetable or chicken broth

Lemon wedges, for serving

Cook the Pasta: In a large skillet or sauté pan, combine the vegetable or chicken broth with the linguine or spaghetti. Bring to a boil over medium-high heat. Cook for about 8-10 minutes, stirring occasionally until the pasta is al dente. If the pasta absorbs all the broth and is not fully cooked, add a splash of water and continue cooking until done. Once cooked, remove the pasta from the skillet and set aside, reserving 1/2 cup of the broth.

    Sauté the Shrimp: In the same skillet over medium heat, add olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Add the shrimp to the skillet, season with salt and pepper, and cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.

      Add Lemon and Tomatoes: Stir in the lemon zest, lemon juice, and halved cherry tomatoes. Sauté for an additional 2-3 minutes until the tomatoes soften and release their juices.

        Combine: Return the cooked pasta to the skillet, mixing it with the shrimp and tomatoes. If needed, add the reserved broth to loosen the pasta and ensure everything is coated in the delicious sauce.

          Garnish and Serve: Remove from heat and stir in the chopped parsley. Serve warm with lemon wedges on the side for an extra burst of flavor.
