4 boneless, skinless chicken breasts

1 lemon (zested and juiced)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

2 cups baby potatoes, halved

1 cup cherry tomatoes

1 cup bell peppers (mixed colors), sliced

1 cup zucchini, sliced

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a bowl, combine olive oil, lemon zest, lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper. Whisk until well blended.

    Marinate the Chicken: Place the chicken breasts into a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well-coated. Let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).
