4 boneless, skinless chicken breasts

3 tablespoons Dijon mustard

1/4 cup pure maple syrup

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 cups Brussels sprouts, halved

2 cups baby carrots

1 red bell pepper, sliced

1/2 cup red onion, sliced

Fresh thyme or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together the Dijon mustard, maple syrup, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

      Marinate the Chicken: Place the chicken breasts in a large mixing bowl or a zip-top bag and pour half of the marinade over them. Make sure the chicken is well-coated. Let it marinate for at least 15 minutes at room temperature or up to 2 hours in the refrigerator.

        Prepare the Veggies: In a large bowl, combine Brussels sprouts, baby carrots, red bell pepper, and red onion. Drizzle with the remaining marinade and toss until the veggies are well coated.

          Arrange in a Pan: On a large baking sheet or roasting pan, arrange the marinated chicken breasts in the center and surround them with the coated veggies.

            Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and slightly caramelized.
