Ingredients
  

4 boneless, skinless chicken thighs

1 tablespoon olive oil

4 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup fresh spinach, roughly chopped

1 cup heavy cream

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Prepare the Chicken: Season the chicken thighs generously with salt, pepper, and Italian seasoning.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs and cook for about 5-6 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, reduce the heat to medium, add minced garlic, and sauté for about 1 minute until fragrant but not burnt.

        Add Sun-Dried Tomatoes and Spinach: Stir in the sun-dried tomatoes and chopped spinach. Cook for about 2-3 minutes until the spinach wilts down.

          Create the Creamy Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir well to combine all the ingredients. Add red pepper flakes and adjust salt and pepper to taste.

            Return Chicken to the Skillet: Nestle the seared chicken back into the skillet. Ensure the chicken is covered with the creamy sauce.

              Simmer & Add Cheese: Let everything simmer together for about 5-7 minutes, until the chicken is cooked through. Once done, sprinkle the grated Parmesan cheese over the top, allowing it to melt into the sauce.

                Garnish & Serve: Remove from heat and garnish with fresh basil leaves.
