Ingredients
  

1 lb ground beef (80/20 for flavor)

1 cup long-grain white rice, rinsed

1 medium onion, diced

2 cloves garlic, minced

1 cup bell peppers, chopped (any color)

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1/2 teaspoon dried oregano

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 cup shredded cheddar cheese (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked, breaking it apart as it cooks. Drain excess fat if necessary.

    Add the diced onion, minced garlic, and chopped bell peppers to the pot. Sauté for about 5 minutes, or until the vegetables are softened.

      Stir in the rinsed rice, diced tomatoes (with juice), beef broth, Worcestershire sauce, smoked paprika, oregano, salt, and pepper. Bring the mixture to a boil.

        Once boiling, reduce the heat to low, cover with a lid, and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed the liquid. Check occasionally to make sure it’s not sticking to the bottom; add a splash more broth if needed.

          If using cheese, sprinkle it on top of the casserole during the last 5 minutes of cooking. Cover the pot to allow the cheese to melt.

            Once done, remove from heat and let it sit for a few minutes. Fluff the casserole with a fork, and garnish with fresh parsley before serving.
