One-Pot Chicken Alfredo with Broccoli

1 lb (450g) boneless, skinless chicken breasts, cubed

2 cups broccoli florets, fresh or frozen

12 oz (340g) fettuccine pasta

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Chicken: In a large pot or Dutch oven, heat olive oil over medium heat. Add the cubed chicken, and season with salt, pepper, and Italian seasoning. Sauté until the chicken is golden brown, about 5-7 minutes. Remove the chicken and set aside.

    Sauté the Garlic: In the same pot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Broth and Pasta: Pour in the chicken broth and bring to a simmer. Once simmering, add the fettuccine, stirring occasionally to prevent sticking. Cook for about 8-10 minutes until the pasta is al dente.

        Incorporate Broccoli: Stir in the broccoli florets. Cook for an additional 3-4 minutes until the broccoli is bright green and tender.

          Make it Creamy: Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Mix well until the cheese has melted and the sauce is smooth. Return the cooked chicken to the pot and stir to combine everything evenly.
