1 lb (450g) potato gnocchi

1 lb (450g) ground beef (or turkey for a lighter option)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, chopped

1 can (14 oz) diced tomatoes, with juices

1 cup (240ml) beef broth

2 cups baby spinach

1 tsp dried oregano

1/2 tsp red pepper flakes (optional, for a kick)

Salt and pepper to taste

4 oz (115g) feta cheese, crumbled

Fresh parsley, chopped (for garnish)

2 tbsp olive oil

Instructions
 

Sauté the Aromatics: In a large pot or deep skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the garlic and cook for an additional 1 minute until fragrant.

    Brown the Meat: Add the ground beef (or turkey) to the pot. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain any excess fat if necessary.

      Add Vegetables: Stir in the diced bell pepper and chopped zucchini, cooking for about 3-4 minutes until they begin to soften.

        Incorporate Tomatoes and Broth: Add the canned diced tomatoes (with their juices), beef broth, dried oregano, red pepper flakes (if using), salt, and pepper. Stir well to combine.

          Cook the Gnocchi: Bring the mixture to a gentle boil. Once boiling, add the gnocchi. Stir and reduce the heat to a simmer. Cover and cook for about 5-7 minutes, or until the gnocchi are cooked through and float to the top.

            Add Spinach and Cheese: Gently fold in the baby spinach and crumbled feta cheese, allowing the spinach to wilt for about 2 minutes. Check the seasoning and adjust salt and pepper as needed.

              Serve: Remove from heat and let it sit for a couple of minutes. Garnish with fresh parsley before serving.
