Ingredients

1 pound large shrimp, peeled and deveined

1 cup orzo pasta

4 cups low-sodium chicken broth

1/2 cup white wine (optional, can substitute with additional broth)

1 lemon (zested and juiced)

4 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

1/2 cup fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Sauté the Shrimp: In a large pot over medium-high heat, melt 2 tablespoons of the butter. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the pot and set aside.

Cook the Aromatics: In the same pot, add the remaining 2 tablespoons of butter. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.

Toast the Orzo: Add the orzo pasta to the pot, stirring for about 2-3 minutes until it’s lightly toasted. This step enhances the nutty flavor of the orzo.

Deglaze and Simmer: Pour in the white wine (or extra broth) and let it simmer for about 2 minutes, scraping any browned bits from the bottom of the pot. Then, add the chicken broth, lemon zest, and dried thyme. Bring to a gentle boil.

Cook the Orzo: Reduce the heat to low, cover, and let it cook for about 10-12 minutes, stirring occasionally until the orzo is al dente and has absorbed most of the liquid.

Combine Ingredients: Once the orzo is cooked, stir in the lemon juice and cooked shrimp. Mix well until everything is heated through. Adjust seasoning with additional salt and pepper if needed.

Serve: Remove from heat and garnish with chopped fresh parsley and lemon slices. Serve warm and enjoy your delightful One Pot Lemon Butter Orzo with Shrimp!
