12 oz (340g) penne or fusilli pasta

1 lb (450g) smoked sausage, sliced (Andouille preferred)

1 medium yellow onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (14.5 oz) diced tomatoes (with juices)

2 cups chicken broth

1 cup heavy cream

2 tablespoons Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

1/2 teaspoon black pepper

Salt to taste

2 tablespoons olive oil

1 cup shredded Parmesan cheese

Fresh parsley, chopped (for garnish)

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced sausage and cook until browned, about 5-6 minutes. Remove the sausage and set aside, leaving the drippings in the pot.

    Cook the Vegetables: Add the chopped onion and bell peppers to the pot. Sauté for 4-5 minutes until the onions are translucent and the peppers start to soften. Stir in the minced garlic and cook for an additional minute, until fragrant.

      Add the Ingredients: Return the browned sausage to the pot, followed by the diced tomatoes (with their juices), chicken broth, heavy cream, Cajun seasoning, smoked paprika, and black pepper. Stir to combine and bring to a gentle simmer.
