1 lb package of gnocchi (store-bought or homemade)

2 cups fresh spinach, roughly chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

2 tablespoons olive oil

Salt and pepper to taste

Grated Parmesan cheese for serving (optional)

Fresh basil leaves for garnish (optional)

Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula as it cooks. Sauté for about 5-7 minutes, or until browned and fully cooked. Remove the sausage from the skillet and set it aside.

    Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and halved cherry tomatoes. Cook for about 2-3 minutes or until the tomatoes start to soften, stirring frequently to avoid burning.

      Add Gnocchi: Toss in the gnocchi (if using store-bought, no need to pre-cook), and stir to combine. Let them cook for about 5-7 minutes, stirring occasionally until they are slightly golden and puffed up.

        Combine Ingredients: Return the cooked sausage to the skillet with the gnocchi and tomatoes. Stir everything together evenly.

          Make the Sauce: Pour in the heavy cream, and add the chopped spinach and Italian seasoning. Stir gently until the spinach wilts and the sauce starts to thicken slightly. Season with salt and pepper to taste.
