Ingredients

1 lb salmon fillet, skin removed and cut into 1-inch cubes

1/4 cup soy sauce

1/4 cup fresh orange juice

2 tablespoons honey

1 tablespoon sesame oil

2 garlic cloves, minced

1 inch fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon cornstarch

1 tablespoon cold water

1 teaspoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Salt and pepper to taste

Olive oil for cooking

Instructions

Make the Marinade: In a medium bowl, whisk together the soy sauce, fresh orange juice, honey, sesame oil, minced garlic, grated ginger, and rice vinegar until well combined.

Marinate the Salmon: Place the salmon cubes in a resealable plastic bag or a shallow dish. Pour the marinade over the salmon and seal or cover. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

Prepare the Glaze: In a small saucepan over medium heat, bring the remaining marinade to a gentle simmer. In a separate small bowl, mix the cornstarch with cold water until smooth. Slowly add this mixture to the saucepan, stirring constantly until the glaze thickens (about 2-3 minutes). Remove from heat and set aside.

Cook the Salmon Bites: In a large non-stick skillet, heat a drizzle of olive oil over medium-high heat. Remove the salmon from the marinade, allowing excess to drip off. Season with salt and pepper. Add the salmon cubes to the skillet in a single layer, being careful not to overcrowd the pan. Cook for about 2-3 minutes per side or until the salmon is golden brown and cooked through.

Add the Glaze: Once the salmon bites are cooked, pour the thickened glaze over them, tossing gently to coat.

Serve with Style: Transfer the glazed salmon bites to a serving platter. Sprinkle with sesame seeds and sliced green onions for garnish. Enjoy these bites hot as an appetizer or over rice as a delightful main dish!
