4 medium-sized russet potatoes, washed and sliced into wedges

1 large yellow onion, sliced into rings

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes & Onions: In a large mixing bowl, combine the potato wedges and onion rings.

      Seasoning: Drizzle the olive oil over the potatoes and onions. Sprinkle the garlic powder, paprika, oregano, thyme, salt, and black pepper. Toss everything together until the potatoes and onions are evenly coated in oil and seasonings.

        Arrange on Baking Sheet: Spread the seasoned potatoes and onions in a single layer on the prepared baking sheet. Be sure not to overcrowd them to allow for maximum crispiness.

          Roasting: Bake in the preheated oven for 25–30 minutes, turning the potatoes and onions halfway through. Bake until the potatoes are golden brown and crispy, and the onions are caramelized.

            Serve: Once done, remove from the oven and let cool for a couple of minutes. Garnish with fresh chopped parsley before serving.
