4 whole mackerel, cleaned and scaled

2 tablespoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon sea salt

½ teaspoon black pepper

3 tablespoons olive oil

1 lemon, zested and juiced

2 tablespoons fresh parsley, chopped (plus more for garnish)

1 tablespoon capers, rinsed and drained

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Mackerel: Rinse the cleaned mackerel under cold water and pat them dry with paper towels. Make shallow cuts on each side of the fish for marinating and better heat penetration.

      Make the Marinade: In a small bowl, combine the smoked paprika, garlic powder, onion powder, sea salt, black pepper, olive oil, lemon zest, and half of the lemon juice. Mix until you have a smooth paste.

        Marinate the Fish: Rub the marinade inside the cavity and all over the outside of each mackerel, ensuring to get into the cuts. Place the fish in a large tray or dish, cover with plastic wrap, and refrigerate for at least 30 minutes (or overnight for more intense flavor).

          Arrange for Roasting: After marinating, place the mackerel on a lined baking sheet, and sprinkle the chopped parsley and capers over them.

            Roast the Mackerel: Roast the mackerel in the preheated oven for 20-25 minutes, or until the fish is cooked through and the skin is crispy. You can also broil them for an additional 2-3 minutes for extra crispiness if desired.

              Final Touch: Remove from the oven and drizzle the remaining lemon juice over the roasted mackerel. Garnish with additional parsley and serve hot with lemon wedges on the side.
