Parmesan Crusted Crushed Turnips

2 pounds turnips, peeled and cut into chunks

1/2 cup grated Parmesan cheese

1/4 cup panko breadcrumbs

3 tablespoons unsalted butter, melted

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Boil the Turnips: Place the turnip chunks in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes, or until the turnips are fork-tender. Drain and let them cool slightly.

    Crush the Turnips: In a large mixing bowl, use a potato masher or fork to crush the cooked turnips to your desired texture. It's okay if there are still some small chunks for added texture.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Mix the Crust Ingredients: In a separate bowl, combine the grated Parmesan cheese, panko breadcrumbs, melted butter, olive oil, garlic powder, onion powder, dried thyme, and a pinch of salt and pepper. Mix until everything is well coated and crumbly.

          Combine Turnips and Crust: Add half of the breadcrumb mixture to the crushed turnips and mix uniformly. Taste and adjust seasoning if needed.

            Prepare Baking Dish: Grease a 9x13-inch baking dish or a similar sized oven-safe dish with olive oil. Spread the crushed turnip mixture evenly across the bottom.

              Add Crust: Sprinkle the remaining Parmesan breadcrumb mixture generously over the top of the crushed turnips to form an even layer.

                Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and crispy.

                  Garnish and Serve: Remove from the oven, let cool slightly, and garnish with fresh chopped parsley before serving.
