400g spaghetti or linguine

4 tablespoons extra virgin olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 can (400g) diced tomatoes

100g black olives, pitted and roughly chopped (preferably Kalamata)

2 tablespoons capers, drained

1 teaspoon dried oregano

1 teaspoon anchovy paste (optional)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Boil the Pasta: In a large pot of salted water, bring to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

    Prepare the Sauce: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant, making sure not to burn the garlic.

      Add Tomatoes: Pour in the canned diced tomatoes along with their juices. Stir in the anchovy paste if using. Bring the mixture to a gentle simmer and let it cook for about 5-7 minutes, allowing it to thicken slightly.

        Incorporate Olives and Capers: Add the chopped olives, capers, and dried oregano into the skillet. Season with salt and black pepper to taste. Simmer for an additional 3-4 minutes to let the flavors meld together, stirring occasionally.

          Combine Pasta and Sauce: Add the drained pasta directly into the sauce, tossing to combine. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.
