2 ripe peaches, sliced into thick wedges

8 oz fresh mozzarella, sliced into rounds

1 cup fresh basil leaves

2 tablespoons extra virgin olive oil

Sea salt, to taste

Freshly cracked black pepper, to taste

Optional: crushed pistachios or walnuts for garnish
