Peach Salsa Chicken Tacos

1 lb (450g) boneless, skinless chicken breasts

1 teaspoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

1 ripe peach, diced

½ red onion, finely chopped

1 jalapeño, seeds removed and minced (adjust to taste)

¼ cup fresh cilantro, chopped

Juice of 1 lime

8 small corn tortillas

1 avocado, sliced (for serving)

Crumbled feta or cotija cheese (optional, for serving)

Instructions
 

Prepare the Chicken: In a medium bowl, combine the olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them evenly with the spice mixture. Let it marinate for at least 15 minutes.

    Cook the Chicken: Preheat a grill or a skillet over medium heat. Cook the marinated chicken for 6–7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from heat and let it rest for 5 minutes before slicing it into thin strips.

      Make the Peach Salsa: While the chicken is resting, combine the diced peach, red onion, jalapeño, cilantro, and lime juice in a bowl. Mix well and season with salt and pepper to taste. Let the salsa sit for a few minutes to allow the flavors to meld.

        Warm the Tortillas: In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, or until they become pliable.

          Assemble the Tacos: On each tortilla, layer a few slices of the grilled chicken followed by a generous spoonful of the peach salsa. Top with avocado slices and a sprinkle of feta or cotija cheese if desired.
