Peanut Butter and Jelly Bars

For the Crust and Topping:

1 cup creamy or chunky peanut butter

½ cup brown sugar, packed

½ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup rolled oats

For the Filling:

1 cup grape or strawberry jam (or your choice of fruit preserves)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Make the Peanut Butter Mixture: In a large mixing bowl, combine the creamy or chunky peanut butter, brown sugar, and granulated sugar. Mix with an electric mixer on medium speed until smooth and creamy.

      Add Egg and Vanilla: Add the egg and vanilla extract to the peanut butter mixture, beating again until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and rolled oats.

          Mix Dry with Wet: Gradually add the dry ingredients to the wet mixture, mixing on low until just combined. Be careful not to overmix.

            Layer the Mixture: Spread about two-thirds of the peanut butter oat mixture evenly in the bottom of the prepared baking pan to form the crust.

              Add the Jam: Spoon the jam evenly over the peanut butter crust layer, spreading it gently with a spatula.

                Top with Remaining Mixture: Crumble the remaining peanut butter oatmeal mixture on top of the jam layer, covering it as evenly as possible.

                  Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set.

                    Cool Down: Once baked, remove from the oven and allow to cool in the pan on a wire rack for about 10-15 minutes. Then, use the parchment paper overhang to lift the bars out of the pan and let them cool completely on the wire rack.
