1/2 cup unsalted butter (plus extra for greasing)

1 cup semi-sweet chocolate chips

1/2 cup creamy peanut butter

1/4 cup granulated sugar

1/4 cup brown sugar (packed)

2 large eggs

1 teaspoon pure vanilla extract

1/4 cup all-purpose flour

1/4 teaspoon salt

4 mini peanut butter cups (or regular-sized, cut in half)

Powdered sugar (for dusting)

Optional: Vanilla ice cream or whipped cream for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease four ramekins (6-ounce size) with unsalted butter and dust lightly with flour or cocoa powder to prevent sticking.

    Melt Chocolate and Butter: In a microwave-safe bowl, combine the semi-sweet chocolate chips and 1/2 cup of unsalted butter. Heat in the microwave in 30-second intervals, stirring in between until fully melted and smooth. Let it cool slightly.

      Mix Dry Ingredients: In a separate bowl, whisk together the granulated sugar, brown sugar, and salt. Add the eggs and vanilla extract, and beat until the mixture is frothy and light in color.

        Combine Mixtures: Gradually pour the melted chocolate and butter mixture into the egg mixture, stirring gently until combined. Be careful not to overmix.

          Add Flour: Gently fold in the all-purpose flour until just combined. Do not overmix; a few small lumps are okay.

            Prepare Lava Cakes: Divide half of the batter evenly among the prepared ramekins. Place a mini peanut butter cup (or half of a larger one) in the center of each ramekin, then cover with the remaining batter, filling each ramekin about 3/4 full.

              Bake: Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft (it should jiggle slightly when gently shaken).

                Cool & Serve: Allow the cakes to cool for 1 minute before running a knife around the edges to loosen. Invert each ramekin onto a plate and gently tap to release the cakes. Dust with powdered sugar and serve immediately, optionally accompanied by a scoop of vanilla ice cream or a dollop of whipped cream.
