Ingredients

1 cup chopped pecans

1 can (15 oz) pumpkin puree

1 can (12 oz) evaporated milk

3 large eggs

1 cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 package (15.25 oz) yellow cake mix

1 cup (2 sticks) unsalted butter, melted

Optional: whipped cream or vanilla ice cream for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

Mix the Filling: In a large mixing bowl, combine the pumpkin puree, evaporated milk, eggs, brown sugar, vanilla extract, cinnamon, nutmeg, and salt. Whisk together until the mixture is smooth and well-blended.

Layer the Ingredients: Pour the pumpkin mixture into the prepared baking dish, spreading it evenly. Sprinkle the chopped pecans over the filling.

Add Cake Mix: Evenly sprinkle the dry yellow cake mix over the pecan layer, covering it completely. Do not stir.

Drizzle Butter: Pour the melted butter evenly over the top of the cake mix. Make sure to cover as much area as possible for an even bake.

Bake the Cake: Place the baking dish in the preheated oven and bake for 45-55 minutes, or until the top is golden brown and the cake mix is cooked through. A toothpick inserted in the center should come out clean or with moist crumbs.

Serve: Allow the cake to cool for about 10 minutes before serving. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream if desired.
