1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

1/2 teaspoon peppermint extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup white chocolate chips

1/4 cup crushed peppermint candies (plus more for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Beat in the eggs one at a time, making sure to fully incorporate each egg before adding the next. Stir in the vanilla and peppermint extracts.

        In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid over-mixing to keep the cookies tender.

            Fold in the semi-sweet and white chocolate chips, along with the crushed peppermint candies.

              Use a cookie scoop or tablespoon to drop rounded dough balls onto the prepared baking sheets, spacing them about 2 inches apart. Flatten them slightly with the back of a spoon.

                Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown while the centers remain soft.

                  Remove the cookies from the oven and let them cool for a few minutes on the baking sheets. Then, transfer them to a wire rack to cool completely.

                    Optional: Garnish the cookies with additional crushed peppermint candies for extra holiday cheer!
