Ingredients

8 ounces elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup diced pepperoni slices

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

1 can (15 ounces) diced tomatoes with Italian herbs (or plain diced tomatoes)

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional for heat)

2 tablespoons all-purpose flour

2 cups whole milk

¼ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions

Cook the pasta: In a large pot of salted boiling water, cook the macaroni according to package instructions until al dente. Drain and set aside.

Prepare the sauce: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Add the tomatoes: Pour in the diced tomatoes with their juices, then add the oregano, basil, red pepper flakes (if using), salt, and pepper. Let this simmer for about 5 minutes, allowing the flavors to meld.

Create the cheese sauce: Sprinkle the flour over the tomato mixture and stir well to combine. Gradually whisk in the milk, ensuring no lumps form. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes.

Incorporate the cheeses: Turn the heat to low and add the sharp cheddar, mozzarella, and Parmesan cheeses to the sauce. Stir until the cheeses are completely melted and creamy.

Combine pasta and sauce: Gently fold in the cooked macaroni and pepperoni slices until everything is evenly coated with the cheesy sauce.

Bake (optional): If you prefer a bubbly, golden top, transfer the mac and cheese to a greased 9x13-inch baking dish. Sprinkle a little extra shredded cheese and some additional pepperoni on top. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes or until the top is golden and bubbly.

Serve: Garnish with fresh basil leaves if desired. Serve immediately and enjoy your Pepperoni Pizza Mac and Cheese!
