1 lb white fish fillets (like tilapia, snapper, or mahi-mahi)

1 tablespoon Cajun seasoning

1 teaspoon black pepper

1 tablespoon olive oil

8 small corn or flour tortillas

1 cup shredded red cabbage

½ cup diced tomatoes

½ ripe avocado, sliced

¼ cup fresh cilantro, chopped

1 lime, cut into wedges

For the Creamy Avocado Sauce:

1 ripe avocado

½ cup Greek yogurt or sour cream

1 tablespoon lime juice

1 clove garlic, minced

Salt and pepper to taste

Prepare the Fish: In a small bowl, mix the Cajun seasoning and black pepper. Pat the fish fillets dry with paper towels and rub the seasoning mixture evenly on both sides.

    Cook the Fish: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the fish fillets and cook for about 4-5 minutes on each side, or until the fish is blackened and flakes easily with a fork. Remove from the skillet and let it rest for a couple of minutes before slicing it into bite-sized strips.

      Make the Creamy Avocado Sauce: In a blender or food processor, combine the ripe avocado, Greek yogurt (or sour cream), lime juice, minced garlic, and a pinch of salt and pepper. Blend until smooth and creamy. Adjust seasoning as necessary.

        Warm the Tortillas: In a dry skillet, warm the tortillas one at a time over medium heat for about 30 seconds on each side until pliable and slightly charred. Keep them warm in a tortilla warmer or wrapped in a clean kitchen towel.

          Assemble the Tacos: On each tortilla, layer a generous amount of the sliced blackened fish, shredded red cabbage, diced tomatoes, and sliced avocado. Drizzle with the creamy avocado sauce and sprinkle with fresh cilantro.

            Serve: Arrange the tacos on a platter and serve with lime wedges on the side for squeezing over the tacos.
