2 lbs Yukon Gold potatoes, peeled and diced

4 tablespoons unsalted butter, at room temperature

1 cup heavy cream, warmed

1/2 cup sour cream

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Fresh chives or parsley, for garnish

Prepare the Potatoes: Place the diced Yukon Gold potatoes in a large pot and cover them with cold water. Add a generous amount of salt to the water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes until fork-tender, about 15-20 minutes.

    Drain and Dry: Once cooked, drain the potatoes in a colander and let them sit for a few minutes to allow excess moisture to evaporate. This step is crucial for achieving creaminess.

      Mash the Potatoes: Return the drained potatoes to the pot. Using a potato masher, masher or ricer, begin to mash the potatoes until smooth.
