400g spaghetti or your favorite pasta

2 cups fresh basil leaves

60g pine nuts (toasted)

2 cloves garlic (minced)

120ml extra virgin olive oil

50g grated Parmesan cheese

Salt and pepper to taste

Cherry tomatoes (halved, for garnish)

Fresh mozzarella balls (optional, for garnish)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set it aside.

    Prepare the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, and minced garlic. Pulse until finely chopped.

      Add Cheese and Oil: Add the grated Parmesan cheese to the food processor. While running the processor, slowly drizzle in the olive oil until the mixture is smooth. You may need to scrape down the sides and add a little salt and pepper to taste. If the pesto is too thick, gradually add a bit of the reserved pasta water to reach your desired consistency.

        Combine: In a large mixing bowl, toss the hot pasta with the pesto until evenly coated. Use the reserved pasta water as necessary to help the pesto adhere to the pasta.

          Garnish and Serve: Transfer the pesto pasta to serving plates. Top with halved cherry tomatoes and fresh mozzarella balls if desired. Drizzle with a little extra olive oil and sprinkle with more Parmesan cheese if you like.
