Ingredients

1 can (20 oz) crushed pineapple in juice, drained

1 cup vanilla Greek yogurt

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs

1/4 cup unsweetened toasted coconut flakes

Fresh pineapple chunks, for garnish

Mint leaves, for garnish

Instructions

Prep the Pineapple: Begin by draining the crushed pineapple. Press it gently in a fine mesh strainer to remove excess juice. Set aside.

Make the Cream Mixture: In a large mixing bowl, combine the vanilla Greek yogurt, heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the mixture until it forms soft peaks. This should take about 3-5 minutes.

Incorporate Pineapple: Gently fold the drained crushed pineapple into the whipped cream mixture. Be careful not to deflate the whipped cream; use a spatula to combine until just incorporated.

Layer the Dessert: In a 9x9-inch baking dish or individual dessert cups, create a layer of graham cracker crumbs (about 1/4 cup), followed by a generous layer of the pineapple cream mixture (about 1/3 of the total). Repeat these layers, finishing with a layer of the pineapple cream on top.

Add the Coconut Topping: Sprinkle the unsweetened toasted coconut flakes over the top layer of the dessert. This will add a lovely crunch and flavor.

Chill: Cover the dessert with plastic wrap and refrigerate for at least 4 hours or overnight. This allows the layers to meld and the flavors to develop beautifully.

Serve: When ready to serve, cut into squares if using a baking dish or simply spoon out of the cups. Garnish with fresh pineapple chunks and a sprig of mint for an extra touch of freshness.
