Ingredients
  

1 block (14 oz) firm tofu, drained and pressed

1 cup fresh pineapple, diced

1/4 cup Sriracha sauce

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons honey or agave syrup (for vegan option)

1 tablespoon rice vinegar

2 tablespoons cornstarch

1 tablespoon vegetable oil (for frying)

2 green onions, thinly sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Tofu:

    - Start by pressing the tofu to remove excess moisture. You can do this by wrapping it in paper towels and placing a heavy object on top for about 15-20 minutes.

      - Once pressed, cut the tofu into bite-sized cubes.

        Make the Pineapple Sriracha Glaze:

          - In a medium bowl, combine the diced pineapple, Sriracha, soy sauce, honey (or agave), and rice vinegar. Mix well to combine. Set aside.

            Coat the Tofu:

              - Place the cornstarch in a shallow dish. Toss the tofu cubes in the cornstarch until each piece is well coated. This will help achieve a crispy texture when fried.

                Cook the Tofu:

                  - In a large skillet, heat the vegetable oil over medium-high heat.

                    - Add the coated tofu cubes and cook for about 5-7 minutes, turning occasionally until they are golden brown and crispy on all sides.

                      Add the Glaze:

                        - Once the tofu is crispy, pour the pineapple Sriracha glaze over the tofu cubes. Stir well to ensure all the tofu pieces are coated with the glaze.

                          - Cook for an additional 3-4 minutes, allowing the glaze to thicken and caramelize slightly.

                            Serve:

                              - Remove from heat and transfer the glazed tofu to a serving platter.

                                - Garnish with sliced green onions and a sprinkle of sesame seeds for added crunch and flavor.
