8 ounces rotini pasta (use whole wheat for added nutrition)

1 cup cherry tomatoes, halved

1 cup cooked beetroot, diced (for that beautiful pink color)

1/2 cup red onion, finely chopped

1 cup fresh spinach, roughly chopped

1/3 cup feta cheese, crumbled

1/4 cup black olives, sliced (optional)

1/4 cup fresh basil leaves, torn

1/2 cup plain Greek yogurt

1/4 cup mayonnaise (or vegan mayo for a plant-based option)

2 tablespoons apple cider vinegar

1 tablespoon olive oil

1 teaspoon garlic powder

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.
