4 slices of sourdough bread

2 tablespoons unsalted butter, softened

1/2 cup marinara sauce

1 cup shredded mozzarella cheese

1/4 cup sliced pepperoni or your choice of toppings (like bell peppers, olives, or mushrooms)

1/2 teaspoon garlic powder

1/4 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat a skillet or griddle over medium heat.

    Spread softened butter on one side of each slice of sourdough bread.

      Place two slices of bread, butter-side down, in the skillet.

        Spoon a generous layer of marinara sauce onto each slice of bread, then sprinkle half of the mozzarella cheese evenly on top.

          Add your choice of toppings (pepperoni, vegetables, etc.) over the cheese, followed by the remaining cheese for a gooey finish.

            Top with the other two slices of bread, butter-side up.

              Cook for 3-4 minutes, or until the bottom slice is golden brown. Carefully flip the sandwiches and reduce the heat to medium-low.

                Cook for an additional 3-4 minutes, pressing gently with a spatula, until the second side is golden brown and the cheese has melted.

                  Remove from heat and let cool for a minute. Sprinkle with garlic powder, oregano, and red pepper flakes if desired.

                    Cut the sandwiches in half and garnish with fresh basil leaves, if using. Serve hot with extra marinara sauce on the side for dipping.
