2 cups all-purpose flour

1 teaspoon salt

1 teaspoon sugar

1 packet (2 ¼ teaspoons) instant yeast

¾ cup warm water (110°F/43°C)

2 tablespoons olive oil

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

1 cup diced pepperoni (or any preferred toppings like bell peppers, mushrooms, or olives)

1 teaspoon dried oregano

1 teaspoon garlic powder

Fresh basil leaves for garnish (optional)

Instructions
 

Make the Dough:

    - In a mixing bowl, combine the flour, salt, sugar, and instant yeast.

      - Gradually stir in the warm water and olive oil until a dough begins to form.

        - Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic.

          - Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm area for about 30 minutes or until it doubles in size.

            Prepare the Filling:

              - In a separate bowl, mix the marinara sauce, diced pepperoni, oregano, and garlic powder. Adjust seasoning as desired.

                Preheat the Oven:

                  - Preheat your oven to 400°F (200°C).

                    Assemble the Pot Pies:

                      - Once the dough has risen, punch it down and divide it into 4 equally sized pieces.

                        - Roll each piece of dough into a circle that is large enough to cover the sides and top of a small ramekin or pot pie dish.

                          - Place each dough circle in the greased ramekins, allowing the excess dough to hang over the sides.

                            Fill the Pot Pies:

                              - Spoon the marinara filling into each lined ramekin, filling them about ¾ full. Sprinkle the shredded mozzarella cheese on top of the sauce.

                                Seal the Pot Pies:

                                  - Fold the excess dough over the filling to create a crust on top. You can crimp the edges with a fork or your fingers to secure it.

                                    Bake:

                                      - Place the filled ramekins on a baking sheet to catch any drips. Bake in the preheated oven for about 20-25 minutes, or until the dough is golden brown and cooked through.

                                        Serve:

                                          - Remove the pot pies from the oven and let them rest for a few minutes before serving. Garnish with fresh basil leaves if desired.
