3 lbs russet potatoes, peeled and thinly sliced

1 cup heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup grated parmesan cheese

4 cloves garlic, minced

2 tablespoons fresh thyme, chopped (or 1 tablespoon dried thyme)

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)

Salt and pepper to taste

1/2 cup green onions, finely chopped

1/4 cup breadcrumbs (optional, for topping)

2 tablespoons unsalted butter, melted (if using breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes: In a large bowl, combine the sliced potatoes with minced garlic, thyme, rosemary, salt, and pepper. Toss well to ensure the potatoes are evenly coated with the seasoning.

      Make the Cream Mixture: In a separate bowl, whisk together the heavy cream and whole milk. Add in half of the cheddar cheese and all the parmesan cheese. Stir until well combined. Season with salt and pepper to taste.

        Layer the Casserole: In a greased 9x13 inch baking dish, layer half of the seasoned potatoes evenly. Pour half of the cream mixture over the first layer. Repeat with the remaining potatoes and cream, ensuring an even distribution.

          Add Cheese: Sprinkle the remaining shredded cheddar cheese over the top of the casserole. If using, mix the breadcrumbs with melted butter and sprinkle this over the cheese layer for a crunchy topping.

            Bake: Cover the casserole with aluminum foil and bake for 45 minutes. Then, remove the foil and bake for an additional 20-30 minutes, or until the potatoes are tender and the top is golden brown and bubbly.

              Garnish and Serve: Once out of the oven, let the casserole cool for about 10 minutes. Garnish with chopped green onions before serving to add a pop of color and fresh flavor.
