2 Salmon fillets (6 oz each)

8 oz large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, diced

1 cup cherry tomatoes, halved

1 tablespoon lemon juice

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Seafood: In a bowl, toss the salmon fillets and shrimp with 1 tablespoon of Cajun seasoning, salt, and pepper. Ensure they are evenly coated and set aside for about 15 minutes to marinate.

    Heat the Pan: In a large, heavy-bottom skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until skin is crispy. Carefully flip the fillets and cook for an additional 3-4 minutes until cooked through. Remove from the skillet and keep warm.

      Sauté the Shrimp: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for 30 seconds until fragrant. Then add the shrimp and 1 more tablespoon of Cajun seasoning and cook for 2-3 minutes until the shrimp turn pink and opaque. Remove and set aside with the salmon.

        Add Vegetables: In the same skillet, add the diced onion and bell peppers. Sauté for 4-5 minutes until softened. Then add the cherry tomatoes and cook for an additional 2 minutes until they start to blister.

          Combine Everything: Return the salmon and shrimp to the skillet with the sautéed vegetables. Drizzle with lemon juice and gently toss to combine. Cook for an additional 2 minutes to heat through.

            Garnish and Serve: Remove from heat and sprinkle with freshly chopped parsley. Serve immediately with a side of rice, quinoa, or fresh greens.
