Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup unsalted butter, melted

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup pumpkin puree (canned or fresh)

1 cup chocolate chips (optional)

1/2 cup chopped pecans or walnuts (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined. Set aside.

Combine Wet Ingredients: In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and pumpkin puree until fully incorporated.

Combine Mixtures: Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay. If using, fold in the chocolate chips and nuts.

Pour and Bake: Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 30-35 minutes or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Cool and Serve: Allow the bars to cool completely in the pan on a wire rack. Once cool, cut into squares and serve. Enjoy the gooey delight!
