1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

4 large eggs

For the Pumpkin Maple Cream Filling:

1 cup heavy cream

1/2 cup pumpkin puree (canned or fresh)

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1 tablespoon powdered sugar (optional, for extra sweetness)

For Garnish:

Additional powdered sugar for dusting

Crushed pecans or walnuts (optional)

Instructions
 

Make the Cream Puffs:

    - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

      - In a medium saucepan over medium heat, combine the water and butter. Stir until the butter is melted and the mixture is boiling.

        - Add the flour and salt all at once, stirring vigorously with a wooden spoon until the dough pulls away from the sides of the pan and forms a ball.

          - Remove the pan from heat and let cool for about 5 minutes. Then, add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

            - Using a pastry bag or a tablespoon, drop mounds of dough (about 2 inches apart) onto the prepared baking sheet.

              - Bake for 25-30 minutes or until the puffs are golden brown and sound hollow when tapped. Allow them to cool on a wire rack.

                Prepare the Pumpkin Maple Cream Filling:

                  - In a large mixing bowl, combine the heavy cream, pumpkin puree, maple syrup, vanilla extract, and pumpkin pie spice.

                    - Using an electric mixer, beat the mixture on medium-high speed until it forms stiff peaks. If you prefer a sweeter filling, you can add powdered sugar to taste.

                      - Once the cream is ready, transfer it to a clean pastry bag fitted with a large round tip.

                        Assemble the Cream Puffs:

                          - Once the cream puffs are completely cooled, carefully cut a small slit in the side of each puff or the top if you prefer a cap.

                            - Pipe the pumpkin maple cream filling inside each puff until they are generously filled.

                              - Optionally, cap the puff with the top portion you cut off, or let them remain open for a rustic look.

                                  - Dust the filled cream puffs with powdered sugar and garnish with crushed nuts if desired.
