1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup canned pumpkin puree

1/2 cup almond milk (or any milk of choice)

1/3 cup coconut oil (melted)

2 large eggs

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

1/2 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Stir until all dry ingredients are well incorporated.

      Mix Wet Ingredients: In another bowl, whisk together the canned pumpkin puree, almond milk, melted coconut oil, eggs, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir gently to combine until just moistened. Be careful not to overmix.

          Add Extras: If you’re using chocolate chips or chopped nuts, fold them into the batter gently.

            Bake: Pour the batter into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

              Cool & Cut: Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely before slicing into bars.

                Store: Once cooled, store the bars in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks.
