Ingredients

Dry Ingredients:

1 ½ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

2 teaspoons pumpkin pie spice

½ teaspoon ground cinnamon

Wet Ingredients:

1 cup canned pumpkin puree

½ cup granulated sugar

½ cup packed brown sugar

½ cup vegetable oil

2 large eggs

½ cup brewed coffee (cooled)

1 teaspoon vanilla extract

Toppings (Optional):

½ cup chopped pecans or walnuts

¼ cup chocolate chips

A sprinkle of cinnamon sugar (for dusting)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon until well combined. Set aside.

Prepare Wet Ingredients: In a medium bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs. Whisk until smooth and fully incorporated.

Combine Mixtures: Add the brewed coffee and vanilla extract to the wet mixture, whisking until well combined. Carefully fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix; a few lumps are okay.

Add Mix-ins: If desired, fold in the chopped nuts and chocolate chips.

Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each cavity about two-thirds full.

Sprinkle Toppings: If you’re using, sprinkle a bit of cinnamon sugar on top of each muffin for a sweet crunch.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Once baked, remove from the oven and let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Serve: Serve warm or at room temperature, and enjoy the cozy flavors of fall!
