6 slices of day-old brioche bread (or any soft bread)

3 large eggs

1 cup milk

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 cup maple syrup (plus extra for drizzling)

1/2 cup chopped pecans or walnuts (optional)

Powdered sugar for dusting (optional)

Fresh berries for serving (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin pan with paper liners or lightly grease them with non-stick spray.

    Prepare the Bread: Tear the brioche bread into small pieces and place them in a large mixing bowl.

      Mix the Wet Ingredients: In a separate bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg (if using), and maple syrup until well combined.

        Combine: Pour the egg mixture over the torn bread pieces. Gently fold the bread into the mixture, making sure all pieces are coated. If you’re using nuts, fold them in now too.

          Fill Muffin Cups: Evenly distribute the mixture into the prepared muffin cups, filling them about 2/3 full. This allows room for them to rise.

            Bake: Place the muffin tray in the oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

              Cool Slightly: Once baked, remove from the oven and let them cool in the pan for about 5 minutes before transferring to a wire rack.
