Quick and Easy Beef Enchiladas

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (10 oz) enchilada sauce

1 cup canned black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 tsp ground cumin

1 tsp chili powder

1 cup shredded cheddar cheese (divided)

8 small flour or corn tortillas

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 5–7 minutes. Drain any excess grease.

      Mix Ingredients: Stir in the enchilada sauce, black beans, corn, cumin, and chili powder. Cook for an additional 3–4 minutes until everything is heated through and evenly combined. Remove from heat.

        Assemble the Enchiladas: Take one tortilla and spoon about 1/4 cup of the beef mixture down the center. Sprinkle with a tablespoon of shredded cheese, then roll the tortilla tightly around the filling. Place seam-side down in a greased 9x13 inch baking dish. Repeat with remaining tortillas.

          Top with Sauce and Cheese: Once all enchiladas are in the dish, pour any remaining enchilada sauce over the top and sprinkle the remaining shredded cheddar cheese evenly across the surface.

            Bake: Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and slightly golden.

              Garnish and Serve: Remove from the oven, sprinkle with fresh cilantro, and let cool for about 5 minutes. Serve warm with sour cream on the side.
