1 pound large shrimp, peeled and deveined

2 cups mixed vegetables (bell peppers, broccoli, snap peas)

3 cloves garlic, minced

1 inch ginger, grated

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

1 tablespoon vegetable oil

1 teaspoon cornstarch (optional, for thickening)

1 tablespoon water (optional, for cornstarch)

Cooked rice or noodles, for serving

Green onions and sesame seeds for garnish

Instructions
 

Prep the Shrimp: If using frozen shrimp, thaw them under cold water. Pat dry with a paper towel. If desired, toss the shrimp with cornstarch and water for a slightly thicker sauce.

    Prepare the Vegetables: Cut the bell peppers into strips and chop the broccoli into small florets. Rinse the snap peas and set all vegetables aside.

      Heat the Pan: In a large skillet or wok, heat vegetable oil over medium-high heat until shimmering.

        Cook the Aromatics: Add minced garlic and grated ginger to the pan, sauté for about 30 seconds until fragrant.

          Add the Shrimp: Toss the shrimp into the hot pan and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.

            Stir-Fry the Vegetables: In the same pan, add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.

              Combine Everything: Return the cooked shrimp to the pan. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Toss everything together until well-coated and heated through.

                Thicken the Sauce (optional): If using cornstarch, mix it with water in a small bowl and stir it into the pan to thicken the sauce. Cook for an additional minute until bubbly.

                  Serve: Remove from heat, garnish with sliced green onions and sesame seeds. Serve immediately over cooked rice or noodles.
