4 pieces of cod fillets (about 6 oz each)

3 tbsp soy sauce (low sodium preferred)

2 tbsp honey or maple syrup

1 tbsp fresh ginger, grated

2 cloves garlic, minced

1 tbsp rice vinegar

1 tsp sesame oil

2 green onions, finely chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

2 tbsp olive oil or vegetable oil

Instructions
 

Prepare the Glaze: In a small bowl, whisk together the soy sauce, honey (or maple syrup), grated ginger, minced garlic, rice vinegar, and sesame oil until well combined. Set aside a couple of tablespoons for later.

    Season the Cod: Pat the cod fillets dry with paper towels, and season both sides with salt and pepper.

      Pan-Sear the Cod: In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, carefully add the cod fillets, cooking for about 3-4 minutes on one side until they develop a golden crust.

        Add the Glaze: Flip the cod fillets over and pour the prepared ginger soy glaze over them. Let it cook for another 3-4 minutes, spooning the glaze over the fillets occasionally until they are cooked through and the glaze thickens slightly.

          Garnish and Serve: Remove the cod from the skillet and place it on a serving platter. Drizzle with reserved glaze, then sprinkle with chopped green onions and sesame seeds to garnish.
