Ingredients
  

1 rack of lamb (8 ribs, frenched)

Salt and pepper to taste

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon Dijon mustard

1 red bell pepper, roasted and peeled

1/2 cup unsalted butter, at room temperature

1 tablespoon lemon juice

1 teaspoon honey

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Lamb:

    - Preheat your oven to 400°F (200°C).

      - Season the rack of lamb generously with salt and pepper.

        - In a small bowl, mix olive oil, minced garlic, rosemary, thyme, and Dijon mustard. Rub this mixture all over the lamb.

          Sear the Lamb:

            - Heat a large oven-safe skillet over medium-high heat.

              - Add the lamb rack, fat-side down, and sear for 3-4 minutes until golden brown. Flip and sear the other side for an additional 3-4 minutes.

                Roast the Lamb:

                  - Transfer the skillet to the oven and roast for about 15-20 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare. Adjust time for your desired doneness.

                    - Once cooked, remove from the oven and let it rest for 10 minutes.

                      Prepare the Red Bell Pepper Butter Sauce:

                        - While the lamb is resting, blend the roasted red bell pepper until smooth.

                          - In a bowl, combine the smooth pepper puree with softened butter, lemon juice, and honey. Mix until well incorporated. Season to taste with salt and pepper.

                            Serve:

                              - Slice the rested rack of lamb into individual chops and arrange on a serving platter.
