Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup dark chocolate chips

1 cup fresh raspberries (or frozen, if not in season)

1/2 teaspoon almond extract (optional)

A sprinkle of sea salt for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.

Add the Eggs and Extracts: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and almond extract (if using).

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.

Incorporate Chocolate Chips and Raspberries: Gently fold in the dark chocolate chips and raspberries using a spatula. Be careful not to overmix to prevent the raspberries from breaking too much.

Scoop the Dough: Use a cookie scoop or tablespoon to drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Optional Topping: Sprinkle a small pinch of sea salt on top of each cookie dough ball for added flavor.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers look slightly underbaked. They will continue to cook while cooling.

Cool Down: Remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes. Then, transfer them to wire racks to cool completely.

Serve and Enjoy: These cookies are best enjoyed slightly warm. Pair them with a glass of milk or a scoop of vanilla ice cream for a delightful treat!
