Ingredients

1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup dark chocolate chips

1 cup fresh raspberries (or frozen, fully thawed)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt until evenly mixed.

Combine All Mixtures: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix!

Fold in Chocolate and Raspberries: Gently fold in the dark chocolate chips and fresh raspberries into the cookie dough, being careful not to break the raspberries too much.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake the Cookies: Place the baking sheets in the preheated oven and bake for 12-14 minutes or until the edges are lightly golden and the centers are soft.

Cool Down: Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Once cooled, serve your delicious Raspberry Chocolate Chip Cookies with a glass of milk or your favorite beverage!
